Description
A chalice is the opposite design philosophy to a tulip. Instead of narrowing to trap aroma, it opens wide — which lets a big yeasty trappist ale breathe and gives the thick head a broad surface to sit on. You lose some aroma concentration and gain everything else.
Chimay Blue is the obvious pour, but Red and Cinq Cents suit it equally. The stem keeps your hand off the bowl, which matters for a beer you will take twenty minutes over. 33cl.
